Fry onions & tomatoes till reddish brown.Add Roopaks Mughlai masala & stir for few minutes.Then Add vegetables, paneer or chicken & cook for 15-20 minutes.
Mughlai Masala Recipe
Ingredients:
- 2 Tablespoons vegetable oil
- 2 Onions, finely chopped
- 2 Tomatoes, finely chopped
- 2 Teaspoons ginger-garlic paste
- 1 Teaspoon red chili powder
- 1/2 Teaspoon turmeric powder
- 1 Teaspoon ground coriander
- 1 Teaspoon ground cumin
- 1/2 Teaspoon garam masala
- Salt to taste
- 500g Chicken, cut into pieces
- 1/2 Cup yogurt
- Fresh coriander leaves for garnish
Instructions:
- Heat the oil in a pan over medium heat. Add the chopped onions and cook until they turn golden brown.
- Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.
- Add the chopped tomatoes and cook until they become soft and mushy.
- Add the red chili powder, turmeric powder, ground coriander, ground cumin, garam masala, and salt. Stir well and cook for a couple of minutes until the spices are fragrant.
- Add the chicken pieces to the pan and coat them well with the spice mixture.
- Cook the chicken for 5-7 minutes until it starts to brown.
- Lower the heat and add the yogurt to the pan. Stir well to combine everything.
- Cover the pan and let the chicken cook for another 10-15 minutes until it is cooked through and tender. Stir occasionally to prevent sticking.
- Once the chicken is cooked, remove from heat and garnish with fresh coriander leaves.
- Serve hot with rice or naan.
