Mughlai Masala Recipe

Ingredients:
  • 2 Tablespoons vegetable oil
  • 2 Onions, finely chopped
  • 2 Tomatoes, finely chopped
  • 2 Teaspoons ginger-garlic paste
  • 1 Teaspoon red chili powder
  • 1/2 Teaspoon turmeric powder
  • 1 Teaspoon ground coriander
  • 1 Teaspoon ground cumin
  • 1/2 Teaspoon garam masala
  • Salt to taste
  • 500g Chicken, cut into pieces
  • 1/2 Cup yogurt
  • Fresh coriander leaves for garnish
Instructions:
  • Heat the oil in a pan over medium heat. Add the chopped onions and cook until they turn golden brown.
  • Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.
  • Add the chopped tomatoes and cook until they become soft and mushy.
  • Add the red chili powder, turmeric powder, ground coriander, ground cumin, garam masala, and salt. Stir well and cook for a couple of minutes until the spices are fragrant.
  • Add the chicken pieces to the pan and coat them well with the spice mixture.
  • Cook the chicken for 5-7 minutes until it starts to brown.
  • Lower the heat and add the yogurt to the pan. Stir well to combine everything.
  • Cover the pan and let the chicken cook for another 10-15 minutes until it is cooked through and tender. Stir occasionally to prevent sticking.
  • Once the chicken is cooked, remove from heat and garnish with fresh coriander leaves.
  • Serve hot with rice or naan.
