Roopak's Kala Chaat Masala is a popular spice blend used in Indian cuisine, especially in street food dishes like chaat. While the exact recipe may vary slightly, here's a basic version you can try at home:
Ingredients:
- 1/4 Cup cumin seeds
- 1/4 Cup coriander seeds
- 2 Tablespoons black peppercorns
- 2 Tablespoons dry mango powder (amchur)
- 2 Tablespoons black salt (kala namak)
- 1 Tablespoon dried mint leaves
- 1 Tablespoon dried ginger powder
- 1 Tablespoon dried pomegranate seeds (anardana)
- 1 Teaspoon ajwain (carom seeds)
- 1 Teaspoon hing (asafoetida)
- 1 Teaspoon red chili powder (adjust to taste)
- 1/2 Teaspoon citric acid (optional, for extra tanginess)
Instructions:
- Dry roast the cumin seeds, coriander seeds, and black peppercorns in a pan over medium heat until fragrant. Make sure not to burn them. This step helps to enhance their flavor. Let them cool down completely.
- Once cooled, grind the roasted cumin seeds, coriander seeds, and black peppercorns into a fine powder using a spice grinder or mortar and pestle.
- Add the ground spice mixture to a bowl. Then, add dry mango powder, black salt, dried mint leaves, dried ginger powder, dried pomegranate seeds, ajwain, hing, red chili powder, and citric acid (if using).
- Mix all the ingredients together until well combined.
- Transfer the masala to an airtight container and store it in a cool, dry place.
