Here's a simple and delicious vegetable recipe using Roopak's Shahi Garam Masala:

Shahi Vegetable Curry

  • 2 Cups mixed vegetables (such as carrots, potatoes, peas, cauliflower, and bell peppers), diced
  • 2 Onions, finely chopped
  • 2 Tomatoes, chopped
  • 2-3 Cloves of garlic, minced
  • 1-Inch piece of ginger, grated
  • 1 Tablespoon Roopak's Shahi Garam Masala
  • 1 Teaspoon turmeric powder
  • 1 Teaspoon cumin seeds
  • 1 Teaspoon coriander powder
  • Salt to taste
  • 2 Tablespoons cooking oil
  • Fresh coriander leaves for garnish
  • 1 Cup water
  • Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  • Add chopped onions and sauté until they turn golden brown.
  • Add minced garlic and grated ginger. Sauté for another 1-2 minutes until fragrant.
  • Add chopped tomatoes and cook until they turn mushy and the oil starts to separate.
  • Now, add Roopak's Shahi Garam Masala, turmeric powder, coriander powder, and salt. Mix well and cook for 2-3 minutes to blend the flavors.
  • Add diced mixed vegetables to the masala mixture. Stir to coat the vegetables evenly with the spices.
  • Pour water into the pan, cover, and simmer for about 15-20 minutes or until the vegetables are tender and cooked through.
  • Once the vegetables are cooked, check the seasoning and adjust if necessary.
  • Garnish with fresh coriander leaves before serving.
  • Serve hot with steamed rice or naan bread.
