Shahi Vegetable Curry
Ingredients:
- 2 Cups mixed vegetables (such as carrots, potatoes, peas, cauliflower, and bell peppers), diced
- 2 Onions, finely chopped
- 2 Tomatoes, chopped
- 2-3 Cloves of garlic, minced
- 1-Inch piece of ginger, grated
- 1 Tablespoon Roopak's Shahi Garam Masala
- 1 Teaspoon turmeric powder
- 1 Teaspoon cumin seeds
- 1 Teaspoon coriander powder
- Salt to taste
- 2 Tablespoons cooking oil
- Fresh coriander leaves for garnish
- 1 Cup water
Instructions:
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Add minced garlic and grated ginger. Sauté for another 1-2 minutes until fragrant.
- Add chopped tomatoes and cook until they turn mushy and the oil starts to separate.
- Now, add Roopak's Shahi Garam Masala, turmeric powder, coriander powder, and salt. Mix well and cook for 2-3 minutes to blend the flavors.
- Add diced mixed vegetables to the masala mixture. Stir to coat the vegetables evenly with the spices.
- Pour water into the pan, cover, and simmer for about 15-20 minutes or until the vegetables are tender and cooked through.
- Once the vegetables are cooked, check the seasoning and adjust if necessary.
- Garnish with fresh coriander leaves before serving.
- Serve hot with steamed rice or naan bread.
