Here's a recipe for Rogan Josh using Roopak's Rogan Josh Masala:

Ingredients:

  • 500g Lamb, cut into cubes
  • 2 Tablespoons vegetable oil
  • 2 Onions, finely chopped
  • 3 Cloves garlic, minced
  • 1-Inch piece of ginger, minced
  • 2 Tomatoes, chopped
  • 2 Tablespoons Roopak's Rogan Josh Masala
  • 1 Teaspoon ground turmeric
  • 1 Teaspoon ground cumin
  • 1 Teaspoon ground coriander
  • 1 Teaspoon Kashmiri red chili powder (adjust to taste)
  • Salt to taste
  • 1 Cup water
  • Fresh cilantro leaves for garnish

Instructions:

  • Heat the vegetable oil in a large pan over medium heat. Add the chopped onions and sauté until they turn golden brown.
  • Add the minced garlic and ginger, and sauté for another 2 minutes until fragrant.
  • Add the chopped tomatoes to the pan and cook until they soften and break down, about 5-7 minutes.
  • Once the tomatoes are cooked down, add Roopak's Rogan Josh Masala, ground turmeric, ground cumin, ground coriander, Kashmiri red chili powder, and salt to taste. Stir well to combine the spices with the tomato mixture.
  • Add the cubed lamb to the pan and stir to coat it with the spice mixture. Cook for 5-7 minutes, stirring occasionally, until the lamb is browned on all sides.
  • Pour in the water and bring the mixture to a simmer. Cover the pan and let it cook over low heat for 45-60 minutes, or until the lamb is tender and cooked through. Stir occasionally and add more water if needed to prevent sticking.
  • Once the lamb is cooked, taste the curry and adjust the seasoning if necessary. If you prefer a thicker gravy, you can simmer the curry uncovered for a few more minutes until it reaches your desired consistency.
  • Garnish with fresh cilantro leaves and serve hot with steamed rice or naan bread.
