Here's a simple recipe for Roopak's Paneer Tikka Masala:

Ingredients:

  • 250 Grams paneer (Indian cottage cheese), cubed
  • 1 Cup plain yogurt
  • 1 Tablespoon ginger-garlic paste
  • 1 Tablespoon lemon juice
  • 1 Teaspoon red chili powder
  • 1 Teaspoon garam masala
  • 1 Teaspoon turmeric powder
  • Salt to taste
  • 2 Tablespoons oil
  • 1 Onion, finely chopped
  • 2 Tomatoes, pureed
  • 1 Green bell pepper, diced
  • 1 Red bell pepper, diced
  • 1 Teaspoon cumin seeds
  • 1 Teaspoon coriander powder
  • 1/2 Teaspoon kasuri methi (dried fenugreek leaves)
  • Fresh cilantro leaves for garnish

Instructions:

  • In a bowl, mix together yogurt, ginger-garlic paste, lemon juice, red chili powder, garam masala, turmeric powder, and salt.
  • Add the paneer cubes to the marinade, making sure they are well coated. Let it marinate for at least 30 minutes.
  • Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  • Add chopped onions and sauté until they turn golden brown.
  • Stir in the tomato puree and cook until the oil starts to separate from the mixture.
  • Add diced green and red bell peppers and cook for another 3-4 minutes.
  • Add coriander powder and kasuri methi, and mix well.
  • Now, add the marinated paneer along with the marinade into the pan. Stir gently to combine.
  • Cook for 5-7 minutes, stirring occasionally, until the paneer is heated through and the flavors are well combined.
  • Garnish with fresh cilantro leaves and serve hot with naan or rice.
