Here's a simple recipe for Roopak's Paneer Tikka Masala:
Ingredients:
- 250 Grams paneer (Indian cottage cheese), cubed
- 1 Cup plain yogurt
- 1 Tablespoon ginger-garlic paste
- 1 Tablespoon lemon juice
- 1 Teaspoon red chili powder
- 1 Teaspoon garam masala
- 1 Teaspoon turmeric powder
- Salt to taste
- 2 Tablespoons oil
- 1 Onion, finely chopped
- 2 Tomatoes, pureed
- 1 Green bell pepper, diced
- 1 Red bell pepper, diced
- 1 Teaspoon cumin seeds
- 1 Teaspoon coriander powder
- 1/2 Teaspoon kasuri methi (dried fenugreek leaves)
- Fresh cilantro leaves for garnish
Instructions:
- In a bowl, mix together yogurt, ginger-garlic paste, lemon juice, red chili powder, garam masala, turmeric powder, and salt.
- Add the paneer cubes to the marinade, making sure they are well coated. Let it marinate for at least 30 minutes.
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Stir in the tomato puree and cook until the oil starts to separate from the mixture.
- Add diced green and red bell peppers and cook for another 3-4 minutes.
- Add coriander powder and kasuri methi, and mix well.
- Now, add the marinated paneer along with the marinade into the pan. Stir gently to combine.
- Cook for 5-7 minutes, stirring occasionally, until the paneer is heated through and the flavors are well combined.
- Garnish with fresh cilantro leaves and serve hot with naan or rice.
