Here's a simple recipe for Roopak's Keema Masala:
Ingredients:
- 500g Minced meat (can be chicken, lamb, beef, or any combination)
- 2 Tablespoons oil or ghee
- 1 Large onion, finely chopped
- 2 Tomatoes, chopped
- 2 Teaspoons ginger-garlic paste
- 1 Green chili, finely chopped (optional, adjust according to taste)
- 1 Teaspoon cumin seeds
- 1 Teaspoon coriander powder
- 1 Teaspoon turmeric powder
- 1 Teaspoon garam masala
- Salt to taste
- Fresh coriander leaves, chopped for garnish
Instructions:
- Heat oil or ghee in a large pan over medium heat.
- Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Add ginger-garlic paste and green chili. Cook for another couple of minutes until the raw smell disappears.
- Add chopped tomatoes and cook until they turn mushy and the oil starts separating from the masala.
- Now add the minced meat and mix well with the masala.
- Cook the meat until it changes color and releases its juices.
- Add coriander powder, turmeric powder, garam masala, and salt. Mix well.
- Cover and cook the keema on low heat until it's cooked through, stirring occasionally. This might take around 20-25 minutes.
- Once the keema is cooked and the oil starts separating, garnish with chopped coriander leaves.
- Serve hot with rice, roti, or naan.
