Fry onions & tomatoes till reddish brown.Add Roopaks Curry Powder stir for few minutes.Add vegetable & let simmer. Add salt to taste.
Curry Powder Recipe:
- 2 Tablespoons coriander seeds
- 1 Tablespoon cumin seeds
- 1 Tablespoon turmeric powder
- 1 Tablespoon ginger powder
- 1 Tablespoon fenugreek seeds
- 1 Tablespoon black mustard seeds
- 1 Tablespoon black peppercorns
- 1 Teaspoon cloves
- 1 Teaspoon cardamom seeds (removed from pods)
- 1 Teaspoon cinnamon powder
- 1 Teaspoon chili powder (adjust to taste for spice level)
- 1/2 Teaspoon nutmeg powder
Instructions:
- Heat a dry skillet over medium heat. Add coriander seeds, cumin seeds, fenugreek seeds, black mustard seeds, and black peppercorns. Toast the spices, stirring frequently, until fragrant, about 2-3 minutes. Be careful not to burn them.
- Remove the toasted spices from the skillet and let them cool for a few minutes.
- In a spice grinder or mortar and pestle, grind the toasted spices along with the remaining ingredients (turmeric powder, ginger powder, cloves, cardamom seeds, cinnamon powder, chili powder, and nutmeg powder) until you have a fine powder.
- Store the curry powder in an airtight container in a cool, dry place.
