Chatkara Masala Spiced Potatoes
Ingredients:
- 4 Medium-sized potatoes, peeled and cubed
- 2 Tablespoons cooking oil
- 1 Medium-sized onion, finely chopped
- 2 Tomatoes, finely chopped
- 1 Green chili, finely chopped (optional, adjust according to taste)
- 1 Tablespoon Roopak's Chatkara Masala
- Salt to taste
- Fresh cilantro leaves for garnish
Instructions:
- Heat the cooking oil in a pan over medium heat.
- Add the chopped onions and sauté until they turn translucent.
- Add the chopped tomatoes and green chili to the pan. Cook until the tomatoes soften and start to break down.
- Add the cubed potatoes to the pan. Stir well to coat the potatoes with the onion and tomato mixture.
- Sprinkle Roopak's Chatkara Masala and salt over the potatoes. Mix well to ensure the spices are evenly distributed.
- Cover the pan and let the potatoes cook on medium-low heat until they are tender, stirring occasionally to prevent sticking.
- Once the potatoes are cooked through, remove the lid and cook for an additional 2-3 minutes to let any excess moisture evaporate and to allow the flavors to meld together.
- Taste and adjust seasoning if needed.
- Garnish with fresh cilantro leaves before serving.
- Serve hot as a side dish or as a filling for wraps or sandwiches.
