Chatkara Masala Spiced Potatoes

  • 4 Medium-sized potatoes, peeled and cubed
  • 2 Tablespoons cooking oil
  • 1 Medium-sized onion, finely chopped
  • 2 Tomatoes, finely chopped
  • 1 Green chili, finely chopped (optional, adjust according to taste)
  • 1 Tablespoon Roopak's Chatkara Masala
  • Salt to taste
  • Fresh cilantro leaves for garnish
  • Heat the cooking oil in a pan over medium heat.
  • Add the chopped onions and sauté until they turn translucent.
  • Add the chopped tomatoes and green chili to the pan. Cook until the tomatoes soften and start to break down.
  • Add the cubed potatoes to the pan. Stir well to coat the potatoes with the onion and tomato mixture.
  • Sprinkle Roopak's Chatkara Masala and salt over the potatoes. Mix well to ensure the spices are evenly distributed.
  • Cover the pan and let the potatoes cook on medium-low heat until they are tender, stirring occasionally to prevent sticking.
  • Once the potatoes are cooked through, remove the lid and cook for an additional 2-3 minutes to let any excess moisture evaporate and to allow the flavors to meld together.
  • Taste and adjust seasoning if needed.
  • Garnish with fresh cilantro leaves before serving.
  • Serve hot as a side dish or as a filling for wraps or sandwiches.
