Ingredients:
- 250 grams fresh okra (bhindi)
- 2 tablespoons Roopak's Bharwan Bhindi Masala
- 2 tablespoons oil (preferably mustard oil for authentic flavor)
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon red chili powder (adjust to taste)
- Salt to taste
- Fresh coriander leaves for garnish (optional)
Instructions:
- Prepare the Okra:
- Wash the okra under running water and pat them dry using a kitchen towel.
- Trim the ends of the okra and make a vertical slit along one side of each okra, ensuring not to cut it into two pieces completely. This will create a pocket to stuff the masala.
- Prepare the Stuffing:
- In a bowl, mix Roopak's Bharwan Bhindi Masala, turmeric powder, coriander powder, cumin powder, red chili powder, and salt to taste.
- Make sure the spices are well combined to create a uniform stuffing mixture.
- Stuff the Okra:
- Take each okra and stuff the spice mixture generously into the slit, ensuring that the masala fills the entire pocket of the okra.
- Repeat this process for all the okra.
- Cooking:
- Heat oil in a non-stick pan or skillet over medium heat.
- Once the oil is hot, gently place the stuffed okra in the pan in a single layer.
- Cook the okra for about 8-10 minutes, turning occasionally, until they are tender and slightly crispy. Ensure that the okra is cooked through and the masala is well roasted.
- If needed, cover the pan with a lid intermittently to help the okra cook faster.
- Once cooked, turn off the heat.
- Serve:
- Transfer the cooked stuffed okra to a serving dish.
- Garnish with freshly chopped coriander leaves for added freshness and color (optional).
- Serve hot with roti, naan, or rice along with your favorite accompaniments like yogurt, pickle, or salad.
