Biryani Pulao Recipe

Here's a simple recipe for Biryani Pulao using Roopak's Biryani Pulao Masala:

Ingredients:
  • 2 Cups Basmati rice
  • 1 Large onion, thinly sliced
  • 1 Large tomato, chopped
  • 1 Cup mixed vegetables (carrots, peas, beans), chopped
  • 2 Tablespoons Roopak's Biryani Pulao Masala
  • 1 Tablespoon ginger-garlic paste
  • 1/4 Cup yogurt
  • 1 Bay leaf
  • 4-5 Whole cloves
  • 4-5 Whole peppercorns
  • 2-3 Green cardamom pods
  • 1 Cinnamon stick
  • 2 Tablespoons ghee or oil
  • Salt to taste
  • Fresh cilantro leaves for garnish
  • Fried onions for garnish (optional)
Instructions:
  • Wash the Basmati rice in cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain and set aside.
  • In a large skillet or pot, heat the ghee or oil over medium heat. Add the whole spices - bay leaf, cloves, peppercorns, cardamom pods, and cinnamon stick. Sauté for a minute until fragrant.
  • Add the thinly sliced onions to the skillet and sauté until they turn golden brown.
  • Stir in the ginger-garlic paste and sauté for another minute until the raw smell disappears.
  • Add the chopped tomatoes and cook until they turn soft and mushy.
  • Now, add the mixed vegetables to the skillet and sauté for a couple of minutes.
  • Add Roopak's Biryani Pulao Masala to the skillet and mix well with the vegetables.
  • Add the soaked Basmati rice to the skillet and gently mix with the masala and vegetables.
  • Pour in the yogurt and mix well to coat the rice evenly.
  • Add enough water to cover the rice, about 3.5 cups. Season with salt according to your taste.
  • Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a tight-fitting lid and let it simmer for about 15-20 minutes, or until the rice is cooked and all the water is absorbed.
  • Once the rice is cooked, fluff it gently with a fork. Garnish with fresh cilantro leaves and fried onions if desired.
