Mango Pickle Recipe

Here's a simple recipe for making mango pickle (aam ka achar) using Roopak's Aam Achar Masala:

Ingredients:
  • 2 Large raw mangoes, diced
  • 3-4 Tablespoons Roopak's Aam Achar Masala
  • 1 Tablespoon mustard seeds
  • 1/2 Teaspoon fenugreek seeds
  • 1/2 Teaspoon turmeric powder
  • 1/4 Cup mustard oil (you can also use any other vegetable oil)
  • Salt to taste
Instructions:
  • Wash the mangoes thoroughly and dice them into small pieces. Make sure to remove any seeds.
  • In a dry pan, roast the mustard seeds and fenugreek seeds until they become aromatic. Allow them to cool down, then grind them into a coarse powder using a mortar and pestle or a spice grinder.
  • In a mixing bowl, combine the diced mangoes with Roopak's Aam Achar Masala, ground mustard and fenugreek seeds, turmeric powder, and salt. Mix well until all the mango pieces are coated evenly with the spices.
  • Heat the mustard oil in a pan until it reaches smoking point. Let it cool slightly, then pour it over the mango and spice mixture. Mix thoroughly.
  • Transfer the mixture into a clean, dry glass jar. Make sure to press it down firmly to remove any air pockets. Seal the jar tightly.
  • Allow the pickle to mature for at least 2-3 days before consuming. The flavors will develop further over time. You can store the pickle in a cool, dark place or in the refrigerator for a longer shelf life.
